Terrific Tuesday Bread Recipes

Here are the Terrific Tuesday bread recipes from Sister Deby:

White Bread Recipe
*from start to finish in 1 hour*

10 1/2 cups white bread flour (do not use all-purpose flour)
*Lehi Roller Mills Turkey Flour
1/2 c. sugar
1 T. salt
3 rounded T. saf-instant yeast
3 quarter-sized circles liquid lecithin*
4 cups hot tap water

Mix dry ingredients. Add lecithin and water. Mix for 1 minute and check consistency. If dough is too dry, add more water. Dough should be very sticky. Mix for 5 minutes. (Do not add flour to the dough after it has finished mixing) Spray counter and pans with Pam. Shape loaves and cover with a dish towel. Let rise 25 minutes. Bake at 350 degrees for 25 minutes. This recipe makes four loaves of bread.
*Squeeze or pour approximately 3 quarter-sized circles of lecithin directly into the bowl. Do not measure.

Italian Loaf Seasonings: Garlic Powder, Seasoning Salt, Italian Seasoning, Parmesan Cheese

Wheat Bread Recipe
*from start to finish in 1 hour*

10 1/2 cups wheat flour (hard red wheat or hard white wheat)
*7 cups wheat = 10 1/2 cups flour
1/2 c. sugar
1 T. salt
3 rounded T. saf-instant yeast
4 quarter-sized circles liquid lecithin*
4 cups hot tap water

Mix dry ingredients. Add lecithin and water. OPTIONAL - To keep bread moist longer, you may add 1 c. of applesauce as a part of the hot water. (Applesauce and water should total 4 cups) Mix for 1 minute and check consistency. If dough is too dry, add more water. Dough should be very sticky. Mix for 10 minutes. (Do not add flour to the dough after it has finished mixing) Spray counter and pans with Pam. Shape loaves and cover with a dry dish towel. If grinding wheat just prior to making bread, let rise 15-18 minutes as flour is warm and dough will rise faster. If using room temperature wheat flour, let rise 25 minutes. Bake at 350 degrees for 25 minutes. This recipe makes four loaves of bread.
*Squeeze or pour approximately 4 quarter-sized circles of lecithin directly into the bowl. Do not measure.

Here is Joy's recipe for the salad dressing from the Terrific Tuesday taco salads:
Copycat Cafe Rio Green Ranch Dressing

2 cups Ranch dressing or make your own with 1 pkg. Buttermilk Ranch Dressing mix - made according to directions
2 large tomatillos or 4 small ones
1/2 tsp minced garlic
2 TBS fresh lime juice
1 tsp green tabasco or 1 jalapeno pepper - not both
6 green onions
1 small bunch cilantro
3 tsp. sugar

Make your Ranch Dressing or use already made dressing and place in large bowl and set aside.  Remove the husks from the tomatillos and wash and cut in quarters.  Add the tomatillos to your blender or food processor with the garlic, lime juice, green tabasco or jalapeno pepper (remove the seeds), green onions and cilantro (remove most of the stem).  Blend well.

Add the blended mixture to the ranch dressing and mix together.  You can add the sugar, although I actually forgot to add the sugar to mine, so if you liked it, you may want to leave out the sugar.  (oops!)

Let this rest overnight, the flavors will blend and get hotter, before serving.  If your dressing is too thick, you can add a small amount of milk or buttermilk to thin it.

Enjoy!
